Potato Salmon Patties/Burgers
2 eggs beaten
1/4c garlic and herb bread crumbs
1/4c potato flakes
1/2 medium onion, minced
1 clove minced garlic
1/4t dill weed
1/4t celery salt
salt and pepper
combine above ingredients and make 4-5 patties 1/2 inch thick
fry for 5 min on each side in 2T olive oil

Rachel's Recipe Book -mostly from Lori
Makes 16 sticks
1T honey
1T yeast
1T powdered milk
1 1/2c warm water
mix and dissolve above ingredients
beat in 4 c flour
twist into ropes
melt 1 cube butter and pour over ropes
sprinkle with parmesan cheese, poppy seed, cinnamon sugar, etc
let rise 20 min and bake at 400 degrees for 15 minutes.
SPUDNUTS
Makes 48doughnuts
1T yeast
1/2c sugar
1t salt
1/2c sugar
1c mashed potatoes
1c scalded and cooled milk
2 eggs
5-6c flour (enough to make dough stiff but not too sticky)
mix and rise. (or use dough setting on bread maker) Roll dough out until it’s about ½ to ¾” thick. Cut with a glass and medicine bottle lid for doughnut shape and let rise until doubled. Deep fat fry. Cover with sugar, cinnamon, etc.
ICECREAM CAKE
Bottom layer: cookie crumbs with 1/4c melted butter
2nd layer: soft (slightly melted) ice cream
3rd layer: chocolate syrup
4th layer: more soft ice cream. Best if it’s a different flavor than layer 2
5th layer: more chocolate or caramel syrup
6th layer: topping of nuts, toffee bits, etc
place in freezer until ice cream and syrup harden
WHIP CREAM
1c heavy cream
1/4c sugar
1t vanilla. Whip cream until almost stiff and add sugar and vanilla and whip until good consistency
EASY PUMPKIN COOKIES
1 carrot cake mix
1 13 oz pumpkin pie filling
chocolate chips.
Mix and drop by spoonful onto cookie sheet. Bake at 350 degrees for 15-20 minutes
SPANISH RICE
½ lb sausage – browned and drained
1 cup uncooked rice
2 cups water
1 can stewed tomatoes (Mexican)
1 1/2t chili powder
1 T brown sugar
simmer til rice is done
add ¼ cup salsa
CHICKEN ENCHILADAS
2 4oz cans green chilies
6 chicken breasts boiled, cooled and chunked (a good use for left over chicken)
2 cans cream of chicken soup
8 oz sour cream
corn tortillas
lots of grated cheese
chopped onions, muchrooms or olive slices
mix and layer tortillas and cheese bake at 350 degrees for 45min-1hr or until warm. Can also be microwaved
CHICKEN STOVETOP BAKE
1 package stovetop mixed with 1 2/3 c warm water
4 chicken breasts
1 can cream of chicken
1/3 c sour cream
mix creams and pour over chicken. Add stovetop as the stop layer. Bake at 375 degrees for 35 minutes. (Jake likes two packs of stovetop)
POTATO SOUP
½ lb bacon diced, browned and drained
remove bacon from pot and add the following:
1 diced potato per person (3 potatoes minimum)
use enough water to cover potatoes
add 1 t salt. Cook until tender. Add 1 can evaporated milk with ¼ c flour mixed in. Add ½ lb or more velveta cheese
CHICKEN SOUP WITH RICE
1 cup rice
½ t salt
8 cups chicken broth divided
2 stalks celery thinly sliced
1 leek, white and green parts thinly sliced (or small potato finely chopped or omit this ingredient)
1 carrot diced
2 cups shredded cooked chicken meat (not canned)
boil 2 c water. Add rice and salt. Bring to boil again. Then simmer for 15 min (or use instant rice) fluff when rice is done cooking.
In another pan warm ¼ c chicken broth and veggies, cook until soft. (5 min) add remaining broth. Bring to a Boil then reduce heat to simmer and cook for 10 more. Add chicken and cook til warm about 2 minutes. Add rice and cook another minute. Add salt to taste.
BROCCOLI SOUP
½ c water –enough to cover broccoli
1 t chicken boullion
½ package frozen broccoli or a small head
boil the above till tender
add 1 can evaporated milk and ¼ c flour mixed as a thickening agent.
1/3 lb velveeta cheese
nutmeg, salt and pepper to taste
slow cooker HAM and BEAN soup
put in ham bone for flavor
4 c water
2 cans white beans (navy or great northern)
1T ketchup
1t mustard
1 stick celery chopped
½ sweet onion chopped
cook for 4 hours on high, remove bone and add chopped ham bites and any left over ham gravy heat until warm.
MEXICAN DIP
2 c sour cream
1 8oz cream cheese
1 c salsa
1 pkg taco seasoning (4T)
mix and serve with tortilla chips

Cream of Chicken Noodle Soup
2 cans of cream of chicken soup
1 can evaporated milk
1can chicken broth
Egg yoke noodles
Chicken cooked and cut / cubed
Frozen Peas (optional)
Shredded carrots
The trick - empty one can of soup into pan fill the soup can with evaporated milk (in stead of H20)
-empty next can of soup into pan fill the soup can with broth (instead of H20)
Cube chicken (can use frozen chicken breasts thawed and cubed)
Cook noodles
Combine soup with chicken and veggies and heat add warm noodles prior to serving (to heat up with soup makes it thick)

Jackie's Recipes
Cajun Chicken Pasta Serve with extra Cajun seasoning
2-3 Boneless, skinless chicken cut into strips
2 tsp Cajun seasoning and possibly much more to taste
2 T butter or margarine
8 slices each green and sweet red pepper
4 lg fresh mushrooms or 1 can sliced mushrooms
1 to 2 cups cream
¼ tsp dried basil, salt, garlic powder
4 oz cooked and drained linguine or fettuccini
Saute chicken in butter, shaking on seasoning to coat, until tender. Add
peppers, mushrooms, onions-heat. Add cream and seasonings till heated, (add a little cornstarch to thicken sauce), toss with pasta.

Boil one 8 oz package of your favorite pasta, spiral or penne works well
Saute one chopped onion in half stick of butter or margarine and add:
3-4 cans stewed tomatoes, chopped
1 can tomato paste
1 pkg sliced pepperoni
Sliced fresh mushrooms or 1 can sliced mushrooms
2 tsp Italian seasoning
1 tsp each: sugar, basil, parsley, and oregano
2 tsp garlic powder or a few crushed garlic cloves
Stir in drained, cooked noodles (makes a big pot) and serve
with shredded mozzarella cheese.
Carmel Apple Cheesecake
Makes 1 9-inch pan
1 (21oz) can apple pie filling 2 eggs
1 9 inch graham cracker crust ¼ cup caramel topping
2 (8 oz) pkg cream cheese, softened 12 pecan halves
½ cup sugar 9 Tbs chopped pecans
¼ tsp vanilla
Preheat oven to 350. Reserve ¾ cup pie filling and set aside.
Spoon remaining pie filling into crust. Combine cream cheese, sugar,
and vanilla. Beat until smooth, add eggs and mix well. Pour over the
apples into crust and bake for 35 min or until center is set. Cool and top
with remaining apples heated in sauce pan with carmel and chopped.

Carmel Syrup By Grandma Day
Serve with pancakes and waffles.
(Not thick enough for ice cream)
Carmelize ½ C sugar at med-high heat, stirring continuously. Wait until
mixture is a deep brown color and liquid. Add 1 C water (mixture will
seize up, but that’s normal). Bring to a full boil with all sugar dissolved.
Add 2 more C sugar and bring to a boil again.
Cool a few minutes and add 1 can evaporated milk, stir in completely.
If you want it slightly thicker, bring to a boil again.
Cheese Soup Makes a big pot.
Chop finely: Saute celery and onions in 2 Tbs butter.
5 carrots Add carrots, potatoes, 2 C water, and
6 stalks celery 5 tsp chicken bouillion, cook until soft.
1 onion Add 4 C cold water + 1C flour shaken
2 potatoes together (basic white sauce.) Let simmer
Until thick, add ½ lb Velveeta cheese.
Stir until cheese is melted and serve.
Chocolate Cheesecake Makes one 9-inch cake.
One graham cracker crust in deep pie plate or springform pan
1 C chocolate chips
3 (8 oz) pkgs cream cheese softened
1 C sugar
3 eggs Melt chocolate chips in a bowl over hot
½ C sour cream water or with a little butter to keep from
3 Tbs flour seizing. Set aside. Beat cream cheese and
2 tsp vanilla sugar until smooth. Blend in eggs, flour
Optional toppings melted chocolate, sour cream, and vanilla.
Pour into curst and bake at 350 for 1 hour until firm. Turn off oven and
let cool in oven for another hour, then cool completely.
Crab Salad If too dry, add more cocktail
sauce or more Miracle Whip
1 pkg imitation crab meat, chunked into bite size pieces
2 cups dry salad macaroni or shells, cooked and rinsed until cold.
2 celery sticks chopped finely
2 Tbs chopped onion or to taste
1 can sliced olives
1 Tbs chives (opt.), 1 tsp Italian seasoning
1 Tbs lemon juice
2 Tbs ketchup
2 Tbs cocktail sauce
3 scoops miracle whip OR 2 scoops + one scoop mayonnaise
Chicken, Sausage, Pepper Jumble
Abt 4 chicken breasts cut into bite size pieces
1 lb Polish sausage, sliced or chunked, 4 peeled and chunked potatoes
½ green pepper and ½ onion sliced
1 Can chicken broth or 1 Tbs bouillon + 1 C water
¼ C Cider vinegar (not red wine vinegar)
2 tsp Italian seasoning, 3 Tbs cornstarch
Cook chicken, spuds and sausage in covered casserole dish at 425 for 20 min. Stir in peppers, onions, and a combo of ½ the broth, vinegar and
seasonings poured over meat. Cook 40-45 min until spuds soft. Drain
juice into pan to make a gravy. Shake together remaining broth and
cornstarch and add to juice in pan. Heat until thickens and bubbles.
Pour back into casserole dish over meat and veggies. Stir and serve.
BBQ Ham on Buns
1 lb slivered ham
1 C ketchup Add all ingredients to small sauce
3 T lemon juice pan. Bring to a simmer, further
¼ C chopped onion chopping ham as you stir. Serve
¼ C brown sugar on toasted buns with cheese, like
2 T Worcestershire sauce sloppy joes.
1 T mustard
Orange Spicy Chicken
Shake 4-6 boneless skinless chicken breasts in mixture of:
½ C flour
2 t salt
4 t black pepper
Brush with butter and brown in 400 degree oven. Put in casserole dish
and spread 1 sliced and separated onion over top. Combine:
1 can orange juice concentrate 2 T cornstarch
1 can water Pour this mixture over chicken
¼ C brown sugar and bake at 325 for 1 hr or until
½ t nutmeg chicken is done.
Taco Soup By Dalene Teichert
Dump following ingredients into crock pot and simmer.
1 lb hamburger, browned
3 cans stewed tomatoes, chopped
2 cans dark kidney beans
1 can corn
¼ C salsa
10 teaspoons chili powder
Serve over Fritos corn chips.
Mark's Favorite Peanutbutter Bars 350 for 10-13 min
Cream together: Press into unprepared cake pan
¾ c melted butter or marg. and bake at 350 for 10-13 min
½ c sugar or until center is barely firm.
1C + 2 T brown sugar Cool for 5 min and spread with
2 eggs more peanut butter. Melt one
Then add: 1 c peanut butter pkg Milk Chocolate chips with
1 tsp vanilla a scoop of peanut butter on low
1 ½ c flour heat and pour/frost onto bars.
1 ¾ c oatmeal Serve with ice cream while
¾ tsp baking soda warm.
½ tsp salt
Orange Julius
½ can orange juice concentrate
1 cup water
1 cup milk
1 tsp vanilla
1/3 cup sugar or less
10-12 ice cubes
Blend in blender and serve. For Strawberry Julius substitute one pint
strawberries and 1/3 can concentrate any berry fruit juice. More sugar
may be needed, depending on the juice added.
Spinach Pie 375 F 1hr 15 min
1 uncooked pie crust, with top Serve with Sour Cream.
1 lb sausage
1 16 oz pkg frozen chopped spinach or 2 8 oz blocks frozen spinach
3 eggs, reserving 1 yolk
1 ½ cups shredded mozzarella cheese
1/3 cup cottage cheese
½ tsp salt, shakes of pepper and garlic powder.
Brown sausage, drain, stir in spinach until thawed and well
Mixed. Turn off heat (so eggs don’t cook), stir in remaining
ingredients except 1 yolk. Fill pie, cover with top crust.
Spread yolk over top to glaze, slit a vent hole and bake.
Bake 350 F, 1 hour
Show-Off Bundt Cake
1 pkg chocolate cake mix, prepared to directions on box.
Filling: 1 pkg cream cheese, softened
2 Tbs butter or marg., softened
1 Tbs cornstarch
1 (14 oz) can sweetened condensed milk
1 egg
1 tsp vanilla
Pour cake mix into greased and floured Bundt cake pan. Beat together
remaining ingredients and pour evenly over cake batter. Bake.
Frost with Dawnette Frosting while still slightly warm, so it runs down
sides. Everyone begs for this recipe! For fancy touch, top w/score bars.
Bake 350 F, 1 hour
Dawnette's Perfect Chocolate Frosting
4 ½ T butter or marg., softened but NOT melted ( room temp. good)
4 ½ T cocoa
1 ½ T corn syrup
¾ tsp vanilla
1 ½ cups powdered sugar
2 T milk
Cream first 4 ingredients with mixer. Add sugar and milk. Ready to
spread. Enough for 9x14 and Bundt cakes, double for layered. May
melt slightly if cake is warm but never dries out.

Lindsay's Recipe
2 pork tenderloin
1 16 oz. bottle of Pace Salsa
1c. of brown sugar
Put in crock pot and cook all day. Serve on Tortillas, as a nacho topping or in Salad.
Rachel's Addition:
Another recipe is to add a can of coke to the mix. Crock pot the meat on high for 3 hours in water. Drain water and then cook in salsa/coke/ br. sugar mixture for 4 hours on low. Shred the last 30 minutes. It's easy to make the rice that goes with it. You just add some lime juice, garlic, canned green chilis and cilantro to some minute rice and whala.
