Cindy's Recipes

banana bread
1/2 c butter softened
1 c sugar
2 eggs
3 sliced bananas ( 2 cups)
2 c. flour
1/2 chopped pecans
1 tsp baking soda
1/4 tsp salt

grease bread pan
cream butter and sugar
mix in eggs, bananas, dry ing. and nuts
pour into greased bread pan
place pan in cold oven
set oven to 300 degrees
bake 1 1/2 hours or until toothpick comes out clean
cool in pan 5 min
remove from pan and let cool
makes one loaf


chicken casserole
6 chicken breasts boiled with basil/bay leaves
break off meat and place in bottom of 9 x 13 pan
mix
1 c melted marg
2 c cream of chicken soup
1 pt sour cream
pour over chicken
crush 2 rolls town house crackers
1 T poppy seeds
1/2 c margarine
mix and sprinkle on top
bake at 350 for 30 minutes


olive garden chicken alfredo
1/2 c butter
2 c heavy cream
1/8 tsp garlic powder
1/8 tsp pepper
1/4 c grated parmesan cheese
12 oz fetticine noodles

melt butter, add cream, garlic powder and pepper. stir for ten minutes or until thick
add cheese and let melt
may add chicken
serve over cooked noodles


chicken enchiladas
2 big cans chicken
1 can green chilis
1 can olives
1 can mushrooms
1 can pimentos
1 big can cream of chicken soup
1 pt sour cream
mix all together
fill tortilla shells
place into greased baking pan and sprinkle with cheese
bake at 350 for 1 hour


parmesan chicken breasts
6 boneless skinless breasts
dipped into melted butter
then rolled into the following mixture
1/2 c parmesian cheese
1/4 c dry bread crumbs
1 tsp oregano
1 tsp parsley
1/4 tsp paprika
salt and pepper
bake at 350 for about 30 minutes


marinated turkey
1 pint soy sauce
1 pint oil
2 pints 7 up
marinate turkey over night
add marinate while constantly turning turkey on grill for 20 minutes



chicken and dressing
place chicken in greased pan
top with slices of mozerella or swiss cheese
totally coat with cream of chicken soup (pile it thick...1/2 inch)
(can dilute soup with chicken broth and sour cream)
tp with dry stove top stuffing mix
cover with lid or foil
bake at 350 for 45-60 minutes

  1. Mmmm...those look yummy Rach! I actually make that chicken and stuffing recipe a lot. It's one of Jared's favs. I just posted a recipe on my blog. Feel free to use it! Here it is:

    Tortilla Soup with Orange

    1/4 c oil (to saute the veggies in)
    1 medium onion, chopped fine
    1 clove garlic, minced
    4 celery stalks, thinly sliced
    1 cup chopped carrots
    2 1/2 c. chicken broth
    1 1/2 c. orange juice
    1 (16 oz) jar salsa (Any kind, I like at least a medium hot)
    1 lb. boneless, skinless chicken breasts, cut into pieces
    Tortilla chips
    Cilantro (opt.)
    Shredded cheese (opt.)

    Saute onion, garlic and celery in soup pot. Stir in broth, orange juice, salsa, and carrots. Reduce heat; cover and simmer until carrots are tender. Add uncooked chicken pieces and simmer uncovered, about 8 minutes, stirring occasionally, just until chicken is done. Try not to let it boil.

    To serve, place chips in soup bowls. Ladle soup over chips. Can sprinkle with cheese and cilantro.
